Hamentaschen
3 eggs
1 cup oil
1 cup sugar
1 t. vanilla
½ t. almond extract
1 t. baking powder
3 cups flour
“Solo” brand filling of choice
In a large mixer, beat together eggs, oil, sugar, vanilla, and almond extract. Add baking powder and flour to get a workable dough. If dough is too wet, add more flour.
Divide dough into quarters. Roll to ¼-inch thickness on lightly floured surface. Cut into 3-inch rounds using a jelly glass.
In center of each circle, place 1 teaspoon filling. Bring edges together to form a triangle, pinching seams together from top down to corners, leaving small opening in the center. Repeat with remaining dough, working with 1/4 of the dough at a time.
Place 2 inches apart on lightly greased cookie sheet. Brush with egg wash of 1 egg mixed with 1 T. water. Bake 350 degrees, 15-17 minutes, or until golden. Remove and cool on rack. Makes about 4 dozen.
